Benefits of Sangri (Sangri Ke Fayde)

These pods have been an important part of the desert diet for centuries. Here is why families value it:

  • Natural plant food: Dried bean pods that bring natural fibre and plant goodness to meals.
  • Desert food tradition: The khejri tree survives in the harshest conditions, and its pods have long been a reliable, nourishing food for desert families, especially during droughts.
  • Vegetable available all year: When fresh greens are costly or out of season, the pods let you cook a hearty sabzi any time.
  • No added preservatives: Preserved by sun drying, the natural way.
  • Filling and satisfying: Cooked with ghee and spices, it makes a rich, wholesome dish.
  • Sustainable crop: The khejri tree needs very little water and is protected and respected in Rajasthan.

Note: These benefits are based on general and traditional use. This is a food, not a medicine. If you have a health condition, please consult your doctor about your diet.

What Is Sangri?

Sangri are the long, slender bean pods of the khejri tree (Prosopis cineraria), the state tree of Rajasthan. The tree grows in the sandy deserts of western Rajasthan and is so valued that communities have protected it for centuries. In spring, the tender green pods are picked by hand, lightly boiled and then dried in the sun until they turn dark brown and crisp. The dried pods can be stored for months and are cooked after soaking. It is the star of ker sangri and panchkuta, two of the most celebrated dishes of Marwar.

How to Cook Sangri

  1. Clean: Rinse the pods well and remove any hard stems.
  2. Soak: Soak overnight (8 to 10 hours) in water until they swell and soften.
  3. Boil: Boil the soaked pods for 10 to 15 minutes until tender, then drain.
  4. Cook: Use in ker sangri, panchkuta, dry sabzi or pickle.

Classic Ker Sangri

Soak and boil the pods and Keriya separately. Heat mustard oil or ghee, add jeera, heeng, saunf and dry red chillies. Add the boiled ker and pods, then haldi, red chilli, dhania powder, amchur and salt. A spoon of kachri powder gives the classic tangy taste. Cook on low flame for 10 minutes and serve with bajra roti.

Sukhi Sabzi (Dry Style)

Cook the boiled pods on their own with jeera, heeng, red chilli, amchur and a little curd for a tangy dry sabzi. It is quick, simple and full of desert flavour.

Panchkuta

Panchkuta is a famous Rajasthani dish made with five desert ingredients: khejri pods, ker, kumatiya, dried kachri and dried red chillies. All are soaked, boiled and cooked together in ghee with spices. It is served at weddings and festivals and is a true taste of Marwar.

Khejri Pod Achaar

Mix boiled and dried pods with mustard oil, rai, saunf, methi, haldi, red chilli and salt. Store in a clean glass jar for a few days to mature. This pickle goes beautifully with parathas and dal-baati.

Taste and Texture

Once cooked, it has a firm, slightly chewy bite and a mild, earthy flavour with a hint of natural sweetness. It soaks up masala well and pairs beautifully with the tangy taste of ker, amchur and kachri.

Sangri vs Other Rajasthani Dried Vegetables

  • Sangri: Long dried beans from the khejri tree, the base of ker sangri.
  • Keriya: Small tangy berries, cooked together with khejri pods.
  • Fogla: Mild, earthy buds, best in raita and light sabzi.
  • Fofaliya: Dried gourd pieces for spicy sabzi.

The Khejri Tree – Pride of Rajasthan

The khejri is often called the lifeline of the Thar desert. Its deep roots reach water far below the sand, so it stays green even in the hottest summers. Its leaves feed camels and goats, its wood is used for fuel, and its pods feed families. The Bishnoi community of Rajasthan is famous for protecting khejri trees, and the tree is honoured in many local festivals. When you cook these pods, you are tasting a food that is deeply connected to the land and culture of Rajasthan.

How Sangri Is Harvested

In March and April, the khejri tree produces bunches of tender green pods. Village families pick them by hand, then boil them briefly in salted water. The boiled pods are spread on cloth or rooftops and dried in the sun for several days until hard and dark. This simple, slow process preserves the pods for the whole year and gives the pods their deep, earthy flavour.

Simple Weekly Meal Ideas

  • Weekday lunch: Ker sangri with bajra roti and chaach.
  • Weekend special: Panchkuta with puri and raita.
  • Everyday side: A spoon of khejri pod pickle with dal and rice.
